Chef Shota’s Capitol Hill pizza pop-up Kōbo ending two-year run on E Pike

A pizza pop-up so good it lasted through two years and a major beer industry takeover is wrapping up its run on Capitol Hill just as its celebrity chef owner is ready to dig in on expanding his neighborhood presence.

Chef Shota Nakajima announced his Kōbo pizza joint inside the Redhook Brewlab on E Pike will close October 31st.

“This partnership lasted much longer than originally planned, and has been nothing short of incredible,” Nakajima’s announcement reads. “We got to make some seriously dope pizza and connect with all of you in the community. A huge thank you to each and every one of you who stopped by, supported us, and shared in the love of good food.”

Nakajima said to stay tuned for new “exciting local projects in 2025.”

His Kōbo goodbye video posted to Instagram shows the chef exploring the woods presumably on a local mushroom hunting trip. Kōbo final special pizza will be the Wandering Forager.

CHS reported here on the fall 2022 debut of Kōbo and its take on Detroit meets Osaka pizza as Nakajima stepped in to fill the kitchen at the Redhook Brewlab microbrewery in the Pike Motorworks development.

Nakajima was already part of the development where he opened his karaage fried chicken joint Taku in 2020. The busy chef can now focus on his next project: growing Taku. More on that, soon.

, meanwhile, rode through big changes for the Redhook Brewlab as “leading global cannabis-lifestyle and consumer packaged goods company” Tilray acquired Redhook in 2023 along with a collection of other Anheuser-Busch In-Bev craft brands in an $85 million deal.

There’s no word on what might come next for the Brewlab’s kitchen but with the fried goodness of a growing Taku next door, there might not be a need for more on this block of E Pike.
