CHS reported last month on the opening of Guillotine, a new Broadway cocktail joint from a duo of veteran Capitol Hill bartenders.

Colin Smith and Andrew Larson’s new venue has filled a mint julep-sized hole in the Broadway bar scene, serving as a worthy next step for the space where Southern-flavored Witness closed last spring after nearly 10 years of business on the street.
Smith and Larson say Guillotine is all about execution. “We will have the tools to do very elevated things,” Smith told CHS earlier this year. “But want everyone to feel comfortable.”
Executive chef Joey Walter formerly of Bar Solea is leading the kitchen with a menu focused around charcuterie and seafood-focused “seacuterie,” oysters on the half shell, fried chicken, lamb loin, or a lion’s mane mushroom filet with entrees in the $25 to $35 range.
The cocktail list highlights a gimlet, old fashioned, a negroni, or a few house specialties like the cognac and green apple Night Queen. House cocktails weigh in at $18 a pop.

The made-over space is comfortable on a sunny Seattle evening and looks even better as the lights dim and the bartenders get to mixing. If you’re lucky, you might find both Smith and Larson behind the bar when you visit.
