With ‘wellness and more,’ Guillotine set to replace Witness on Broadway

It seems when it comes to cocktails, the guillotine holds a place similar to the legendary sidecar — 10,000 recipes that can vary from bartender to bartender, night to night.

We’re still learning what the recipe will be at new Capitol Hill restaurant and bar Guillotine when it opens soon on Broadway. Any kings and queens might want to watch their step.

The new project with a solid dose of Seattle mixology is being built out this month in the space left empty by the exit of Southern-style cocktail joint Witness last spring after nearly 10 years of business on the street.

Owners Gregg Holcomb and Alison Holcomb remain part of Broadway at nearby Olmstead.

Seattle food and drink veterans Colin Smith and Andrew Larson will be stepping out from behind the bar — you may have made acquaintance on the Hill at Tavern Law — in a first-time collaboration at Guillotine. Larson has been mixing drinks on Capitol Hill for a decade.

The new joint’s tagline promises “wellness and more.” We hope to learn more about those plans as the project gets closer to opening.

The soon-to-open addition will help revive a part of Broadway’s nightlife community as the street’s cocktail-forward venues and booze-forward bars continue to provide a neighborhood alternative to Pike/Pine’s weekend crowds. You can make a pretty decent bar hop north from Capitol Hill Station to Nacho Borracho to La Cocina to Herb and Bitter to Corvus to Bait Shop to the Deluxe and back again.

Guillotine is now ready to slice its way, gently, into the middle.
