Rubinstein Bagels is ready for its Capitol Hill debut. Andrew Rubinstein tells CHS the 15th Ave E shop is ready for business and celebrating a grand opening on Friday.
“We’re very excited about this location,” Rubenstein writes. “It’s truly an enclosed environment, more of what I dreamt of when I was putting together this bagel dream. We’ve carried through elements of the South Lake Union shop, so it will be familiar. We were able to get a great mural produced by Bow How Workshops which is just the coolest thing.”
CHS reported earlier this year on the plans for Rubinstein’s expansion to 15th Ave E to take over the space left empty by the pandemic exit of Southern bakery favorite The Wandering Goose.
While the new Capitol Hill location won’t be baking on site, the place will be stocked twice daily from the original South Lake Union shop. “Freshies on the road! Lookout,” Rubinstein said.
The new shop space is nestled in next to the Ethan Stowell Restaurants venue Rione XIII and fills in a missing piece of 15th Ave E left empty when The Bagel Deli closed on the street in 2013.
It also joins a robust Capitol Hill bagel scene where Eltana marked 10 years on 12th Ave in 2020 as Jewish deli powerhouse Dingfelder’s added its own bagels to the lineup. E Madison walk-up Westman’s Bagels expanded in 2019 and Loxsmith Bagels is now a daytime roommate to Broadway’s Nacho Borracho.
Meanwhile, area baked goods will get an upgrade in Montlake where Sea Wolf Bakers is preparing its new expansion.

What does does he mean by it’s more of a “closed environment”?
It’s their own autonomous space, not a kiosk open to a large corporate lobby like the original in the via 6 building.
Fingers crossed that they make that space feel like less of an airplane. I loved wandering goose but eating there definitely felt uncomfy with people standing in the packed aisle…
Their bagel did not dissapoint! One of the best bagels I’ve had in a LONG time.
