Liberty Bar — Capitol HIll’s only sushi, espresso, and craft cocktail joint — has never missed a day of business since it opened in 2006.
The 15th Ave E community spot wasn’t about to let COVID-19 break its streak. You can stop by while observing proper social distancing for a coffee, sushi, or a bottle of wine, beer, or booze with purchase. Like all Hill cocktail destinations, Liberty can’t offer up mixed drinks to go — yet.

“We take immense pride in having been open every. single. day. for 14 years,” Liberty posted in an announcement of its plans for the COVID-19 restriction period. “Our values dictate that a neighborhood bar must be there for the neighborhood. That said, and to ensure our collective safety, we have established an unrelenting commitment to hand-washing and sanitizing any and every surface.”
In 2017, CHS wrote about Andrew Dalan and Brandon Paul Weaver, the former employees who took over the popular bar after attempts to transition the business to a co-op fell through.
Liberty ownership also points out that it believes it is giving its employees the proper support they need to work under these conditions.
“Additionally, our employees have access to healthcare, sick pay and time-off without repercussion such that no one has to come to work ill,” the announcement reads. “We will not risk the health of our staff or the health of our guests for any reason.”
They have also set up a fundraiser if you’d like to help support Liberty’s staff.
