Things are a little noisy over at Analog Coffee right now.
The cafe, located on the corner of Summit Avenue East and East Thomas Street, is just a walk-up shop right now, open in the mornings. Owners Tim Hayden and Danny Hanlon are busy behind the fake walls getting ready for the main event: when they’ll be able to open a sit-down coffee shop. Tim and Danny have been talking about opening a coffee shop in Seattle for a while now, but until they found the empty old gym on Summit Avenue, it had not been a reality. “People weren’t sure we were going to do it, actually open our own coffee shop,” says Hanlon.
I sat down with them on a Sunday afternoon when they were taking a break from putting up drywall ceilings. “We wanted to build our personal vision of the best coffee shop we could imagine. A neighborhood shop that has the best coffee in Seattle,” said Hayden. “This is the only coffee shop we will ever own, and we want to get it right,” Hanlon told me.
Getting it right definitely appears to be keeping it simple. Right now there are two things on the menu at Analog: French press, and pour-over. If you’ve never had a pour-over, it’s a simple version of drip coffee for one cup in which a steady stream of water is poured over ground coffee. The first time I saw it, it reminded me of making risotto. Not too much water, not too little. It produces a cup of coffee with very clear flavors. The coffee at Analog comes from Herkimer Coffee, where Hayden worked for several years. The pair became friends working at another coffee shop, Cupcake Royale in Ballard.
Once they open fully, the menu will expand a little. They’re getting one of the first of Synesso espresso machine’s new line of models that use pressure to create a shot unlike any other. Hayden described espresso made on this machine to be like “champagne bubbles, tiny micro bubbles as part of an incredibly smooth shot”. But Analog coffee clearly aims to keep it simple. Not too simple, though. I asked if the shop would be so analog that there wouldn’t be wi-fi to keep the laptops out. Negative, they said. Wi-fi will be available, so laptops are welcome and so are typewriters.
Analog Coffee aims to be finished with construction within a month. Until then, they’re open from seven to eleven, Monday through Saturday, at 235 Summit Ave E.
Did they mention what their eventual full-time hours are going to be?
I have been going pretty regularly to their makeshift coffee stand they have set up while they work on the shop. It’s fun chatting and hearing about the projects they’re working on. These guys are really excited, super sweet, and putting a lot of thought into the details of the place. Can’t wait to see it finished! :)

I’ve dropped by and the guys are super nice… but with Arabica and Starbucks within a few blocks, a new C.C.Attle’s opening up a couple of blocks farther, Online Coffee/Cafe across from the new C.C.Attle’s, I wonder what they were thinking when they picked the location?
Here’s what I’m hoping for: a non-Starbucks (maybe with wine & beer) and with tables that I can sit and work/read/eat at. I like Arabica, but it’s set up for chatting only.
